A simple, hearty meal that's perfect for breakfast, brunch, lunch, or dinner--Shakshuka is a flavorful Middle Eastern and North African dish made with eggs gently poached in a rich tomato sauce seasoned with onions, peppers, and warm spices.

Ingredients:

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 can (14 oz / 400 g) diced tomatoes
  • Salt and pepper, to taste
  • 4–6 eggs
  • Fresh parsley or cilantro, chopped (for garnish)
  • Crusty bread, for serving

Directions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5–7 minutes.
  2. Stir in the garlic, paprika, and cumin, and cook for 1 minute until fragrant.
  3. Add the diced tomatoes, season with salt and pepper, and simmer for 10–15 minutes until the sauce thickens slightly.
  4. Make small wells in the sauce and crack the eggs into them.
  5. Cover the skillet and cook for 5–8 minutes, or until the egg whites are set and the yolks reach your desired doneness.
  6. Garnish with fresh parsley or cilantro and serve immediately with crusty bread.
